Maple pork chops with cranberry salsa
4 pork chops, trimmed of excess fat 3 tbsp maple syrup Salt and freshly ground black pepper ½ cup craisins 1 small cucumber, finely diced 3 spring onions, finely chopped ½ cup chopped fresh
- Place pork trimmed of excess fat in a ceramic dish. Drizzle with maple syrup and season with salt and pepper. Rub maple syrup into the meat to coat evenly.
- To make salsa, combine craisins, finely chopped cucumber, chopped spring onions, coriander, finely chopped chillies with seeds removed and vinegar in a bowl with 2 tablespoons olive oil. Season with salt and pepper and toss well.
- Heat a char-grill pan or large nonstick frying pan on medium. Cook pork chops for 3 to 5 minutes on each side, or until cooked to your liking. Serve topped with cranberry salsa.
