Savoury stuffing loaf
- Heat oven to 190 degC. Heat olive oil in a saucepan, add finely chopped onion and crushed garlic and cook over a moderate heat for 5 to 10 minutes until soft but not browned. Remove to cool.
- Cut the multi-grain bread into small cubes and combine in a large bowl with the cooked onion mixture.
- Stir in craisins, chopped walnuts, chopped fresh herbs and lightly beaten eggs to bind mixture. Season with salt and pepper to taste.
- Pack mixture into a lightly oiled standard loaf tin and bake for 40 minutes. Cover with foil towards the end of cooking to prevent over-browning, if necessary. Remove from tin, slice and serve hot.
