Quiches and tarts are easy dishes that bridge the gap between summer and winter food because they can be served either warm or cold.
- Preheat oven to 210C. Lie two sheets of puff pastry end to end allowing a 2cm overlap to seal.
- Fold in 1cm of pastry around the edges.
- Spread over pasta sauce.
- Arrange the anchovies in a diamond pattern on the pasta sauce and place an olive in the centre of each diamond.
- Brush the edges of the pastry with egg and bake for 15 minutes or until the pastry is golden and puffed. Serve warm or cold.
