Quick roast lamb
This is a great way to make a roast lamb for dinner, in less than half the time. Great for busy mums on the go.
- Put the lamb steaks in a bowl with the redcurrant jelly and mint sauce, and then allow to marinate for 10 minutes.
- Preheat the oven to 200 degC. Put potato wedges on a baking tray with rosemary and bake for 15 to 20 minutes, turning the potatoes occasionally.
- Heat the olive oil and pan-fry the lamb steaks for 3 to 4 minutes each side. Serve with the wedges and some head broccoli, divided into florets and cooked with the juices poured on top.
