Chocolate chip biscuit log
A modern twist on a Kiwi classic.
- Whip cream and icing sugar together, then mix in the mascarpone, brandy and vanilla.
- Dip chocolate chip biscuits briefly into coffee, one at a time.
- Spread biscuits with cream mixture and sandwich together to form a log on a serving platter, using all of the biscuits.
- Cover the log with remaining cream, then sprinkle with grated chocolate. Refrigerate for several hours before serving.
