Greek cheese triangles
These cheesy triangles are the perfect finger food to warm cold hands on a winter's day.
- Crumble feta into a bowl and mix with ricotta, grated parmesan, whisked egg, chopped parsley and dill. Season with black pepper.
- Brush one sheet of filo pastry with butter and place another sheet of pastry on top. Brush top of the filo sheet with butter and add another. Continue until you have four filo sheets stacked.
- Cut filo into four 10cm-wide strips. Next, place a generous tablespoonful of filling in the corner of a strip, then lift the corner of pastry with the filling to fold over diagonally to form a triangle. Continue to fold filo into triangles until you get to the end of the strip. Brush with melted butter and place on a cold baking tray.
- Continue to make triangles until mixture and pastry are used up. Bake triangles for 10 to 15 minutes until pastry is golden.
