Marinated mushrooms with black vinegar, walnuts and chilli

Remember when marinated mushrooms were a thing? Here’s a yum char-inspired version of the 1980s classic.
- Put the crushed garlic, chilli, black vinegar and oil in a bowl. Whisk to combine, then add the mushrooms. Stir, cover and let stand for 30 minutes.
- Just before serving, add the walnuts and spring onions. Stir gently and serve.
