DIY pain au chocolat

This is more life hack than recipe - while it’s best made with good eating chocolate, it can also be the vehicle for any mythical ‘leftover Easter eggs’. You could also try it with stale hot cross buns, but I prefer using sourdough for a better contrast in texture and flavour.
- Split the baguette in half through the middle. Butter lightly on both sides and sprinkle the chocolate on one cut side. Put the second piece on top and press down, then cut into sections. Set aside.
- Beat the eggs, milk and salt together. Carefully dip the chocolate ‘sandwiches’ in this mixture, making sure all sides are covered.
- Heat a knob of butter and a teaspoon of oil in a heavy frying pan over medium heat. When the butter foams, fry the sandwiches on both sides until golden brown and the chocolate is melting. Remove from the pan and drain briefly on paper towels, then dust with icing sugar and serve. Eat immediately.
