Couscous with grapes and cranberries
( SERVES 6 )
Adding a little saffron to couscous or rice gives it a gorgeous colour and a lovely fragrance.
- Put the boiling water and saffron in a cup and allow to stand for at least 5 minutes.
- In a large bowl mix together the couscous, lemon zest, orange zest, salt and saffron water. Allow to stand for about 10 minutes, then fluff up with a fork. Add the almonds, grapes, cranberries, mint and dressing and toss to combine.
