Chilli coconut chicken bites

Coconut cream is at the heart of Pacific cooking. It only takes a little to add a rich, tropical, palate-filling flavour. Avoid using chicken mince that has been frozen as it will be too watery.
- Preheat oven to 200°C fanbake and line a shallow oven dish with baking paper.
- Combine all ingredients except chilli jam or sauce and mix well. Use wet hands to shape the mixture into walnut-sized bites, transferring to prepared dish as you go. Cook until golden-brown with no pinkness inside (about 15 minutes), shaking the tray once or twice to brown evenly.
- Garnish with coriander and chilli, and serve hot or at room temperature with chilli jam or sauce.
