When it comes to smashed up avocado, it’s hard to go past guacamole. I make my guac with crushed garlic, lots of lemon and salt and pepper (plus sometimes chopped tomatoes, finely diced red onion or chilli and coriander depending on what’s around and what I’m serving it with). Sometimes I make an avo and hard-boiled egg smash with a couple of eggs, a little lemon and mayo and salt and pepper. This avocado feta smash is another great combo. Serve on a platter with crusty bread or crostini and a selection of nibbles, such as smoked salmon, caperberries and sliced radishes and cucumber. It’s also good with scrambled eggs.
- Mash avocado flesh in a bowl. Crumble feta finely, add to the avocado with the spring onion, lemon juice, salt and pepper to taste and mash to combine. You can cover and chill any leftovers but it is best used within a day as it will go brown.
