Chilli fried eggs with avocado salsa
( SERVES 1 )
Serves one hungry person or two as a light meal.
|1 medium||Avocado, halved, stoned, peeled and diced|
|1||Lime, finely grated rind and juice|
|¼ cup||Coriander, finely chopped|
|4||Cherry tomatoes, quartered|
- Combine all the salsa ingredients in a bowl.
- Heat the oil in a medium frying pan on medium. Add the eggs and the chilli. Fry until the whites are golden around the edges.
- Pile a little salsa on the toasted ciabatta on serving plates. Top with the eggs. Add the remaining salsa on the side and drizzle with the chilli oil.
