Flat-iron steak with roasted peppers

The flat-iron steak, which is much-loved by Americans and professional cooks, has become increasingly popular in Kiwi kitchens this summer for its ease of use. A quick pan-fry or grill is all this cut, that is full of flavour, requires. - Cut the eggplant, peppers, onions and tomatoes in half. Place in a roasting dish and drizzle with oil and roast in a 190C oven for 40 minutes (onions may require a little longer) until soft. Add the tomatoes for the last 10 minutes of cooking.
- When cool enough to handle, remove the skin from the eggplant and peppers then slice everything and place in a bowl with any pan juices. Add extra virgin olive oil and sherry vinegar and season well.
- Heat a frying pan. Sprinkle Silver Fern Farms Beef Flat-Iron Steaks with oregano and some salt and pepper. Drizzle with oil and fry 3 minutes each side. Remove and rest, covered for 5 minutes.
- Serve the peppers at room temperature with steak and crusty bread to mop up all the good juices.
