Parsley butter (Maitre d’hotel butter)
- Combine all the ingredients and mash with a fork or pulse together in a food processor.
- Roll in plastic wrap in a cylinder shape, twisting the ends like a Christmas cracker and refrigerate or freeze until needed.
- Slice off as required.
Make a change
For other variations, you can add:
- 1-2 Tbsp prepared mustard
- 1-2 Tbsp crushed garlic for a good garlic butter
- Basil, parmesan and garlic
- Sundried tomato and fresh oregano
- Rosemary, ginger and soy sauce
- Coriander and lime
