- The sausages and beans in tomato sauce can be made completely 3-4 days in advance and gently re-heated to serve. Or just make the tomato sauce in advance (steps 1 and 2), this tomato sauce is handy to have on hand for pastas, pizzas, to serve with meatballs or layered with grilled vegetables and cheese for a vege bake.
- Prepare chicken and potatoes for the skewers and leave them marinating overnight. The salad and coconut rice are best made fresh.
Serves 4 with plenty of bean mix to use for another meal.
Second time around
Keep half the bean mix (without the sausages) to make patties to serve in buns or with salad another night: Mash the bean mix and stir in 1 grated courgette, 1 grated carrot, 1 beaten egg and ½ cup flour. Season with salt and pepper if required. Fry large spoonfuls of the mix in oil until golden and crispy on both sides. The bean mix also makes a deliciously creamy soup, heated with 4-5 cups vegetable stock and blended.
The secret to this simple dish is to have all ingredients prepared and lined up ready to toss in to the saucepan as soon as the spaghetti is cooked and drained so that the heat of the spaghetti can slightly cook everything. Use herbs that you have on hand, even if it’s just parsley. Serves 4.
Alternating chicken with potato for these spicy Thai skewers stretches a small amount of chicken to feed four. Plain rice could be served instead of coconut rice but it does bring a level of rich, creaminess to the meal. The salsa-style salad balances everything with its tangy sweetness.
