Video: How to store Parmesan
Parmigiano-Reggiano, or Parmesan cheese, is a hard cheese commonly used in Italian cooking. Made only in particular province in Italy, it has a sweet smell (with a hint of pineapple) so the best way to tell if it's real Parmesan is to use your nose.
In this video, Ray McVinnie shows us how to look after Parmesan so it doesn't go mouldy in the fridge. Using a cloth and an air-tight container, it's best to create a dry environment for what is essentially a live food that needs to breathe. Stored this way, Parmesan will last in the fridge for months.
