Coffee and ginger gems
( SERVES 12 )
Think of coffee as more than a shot of caffeine
- Heat gem iron in oven at 200C. Cream 70g unsalted butter with ¼ cup caster sugar until pale and fluffy. Beat 1 egg into mixture, then fold in 2 Tbsp golden syrup.
- Sift in 1 cup flour, 1 Tbsp ground ginger and a pinch of salt and fold through.
- Heat ¼ cup milk with ½ cup strong coffee. Whisk in 1 tsp baking soda then fold quickly into creamed mixture.
- Add pinches of butter to the hot gem iron and spoon the mixture evenly into the sizzling butter. Bake for 15 minutes, or until golden and well risen. Makes 12.
