Ingredients

2 heads Garlic
2 Kumara, small
1 can Butter beans
⅓ cup Walnuts, chopped
1 can Borlotti beans
1 Orange, or lemon, zested
1 Tbsp Mayonnaise
1 handful Fresh herbs, chopped, such as chives and marjoram

Directions

  1. Roast garlic and kumara until soft. Skin the cloves and the kumara and mash together with a little salt and olive oil.
  2. Strain butter and borlotti beans into a bowl. Add the mash, chopped walnuts, a little orange or lemon zest, herbs and mayonnaise. Lightly crush together with a fork, season with salt and freshly ground black pepper, and serve with a grilled steak or fish.
