Theo's Tiropitta (cheese pie)

- Mix all the ingredients together in a large bowl.
- Line an oiled baking dish with a layer of flaky pastry (I used a sheet of frozen puff pastry).
- Top with the cheese mix and cover with another sheet of pastry.
- Brush the top with oil and prick with a fork.
- Bake at 180 degC for around 20 mins until the pastry has coloured .
- Serve hot or cold.
