Baked eggs and tomato

Feeling a bit under the weather? Snuggle up and enjoy.
- To 3/4 cup homemade tomato sauce (or Watties chopped tomatoes in puree), add 1 tsp chopped thyme, 1 tsp ground cumin, the zest of 1/2 a lemon, and freshly ground black pepper.
- Spoon enough tomato sauce to fill one half of a mug or ramekin and break a fresh egg into the other half. Drizzle with olive oil, sprinkle with flaky sea salt and bake in a 180C oven until the egg is cooked to your liking. Serve with chopped spring onion and parsley and crusty bread for dipping.
Add cooked chopped sausage or prawns to the tomato sauce.
