Chopped chicken salad with sweet basil dressing

Use leftover chicken or for ease, buy a cooked chicken to make this tasty and healthy chicken salad.

Salad

200 g Chicken, diced and pre-cooked
½ cup Red cabbage, shredded
2 handfuls Lettuce, chopped
¼ cup Spring onion, chopped
½ Red capsicum, chopped
½ cup Corn kernels, cooked, or corn from 1 ear
1 cup Couscous, use Israeli couscous, prepare according to directions on the packet
1 cup Dried cranberries, chopped
¼ cup Tasty cheese, finely grated
2 Tbsp Pecans, finely chopped

Sweet basil dressing

1 cup Basil, roughly chopped
½ cup Olive oil
3 tsp Lemon juice
2 tsp Honey
3 tsp Water
1 Tbsp Mayonnaise, low fat

Directions

  1. In a bowl large enough for tossing salad, add all the salad ingredients and set aside.
  2. Combine olive oil, basil, lemon juice, honey, water and mayonnaise in a food processor until smooth. 
  3. Pour over the salad, toss gently, season with salt and pepper and serve immediately.

    I substituted the red cabbage for finely sliced celery and cu***ber for the crunch and omitted the last four ingredients. Used bbq chicken breasts. Used my own basil viniagrette and served alongside a potato salad with creamy potato salad dressing (1/2 heinz mayo, 1/4 sour cream, 1/4 greek yoghurt & 1tsp smoked paprika, squeeze of lemon juice). Nice summer meal.
