
Chopped chicken salad with sweet basil dressing
( SERVES 2 )

Use leftover chicken or for ease, buy a cooked chicken to make this tasty and healthy chicken salad.
Salad
Sweet basil dressing
1 cup | Basil, roughly chopped |
½ cup | Olive oil |
3 tsp | Lemon juice |
2 tsp | Honey |
3 tsp | Water |
1 Tbsp | Mayonnaise, low fat |
Directions
- In a bowl large enough for tossing salad, add all the salad ingredients and set aside.
- Combine olive oil, basil, lemon juice, honey, water and mayonnaise in a food processor until smooth.
- Pour over the salad, toss gently, season with salt and pepper and serve immediately.

added 1499 days agoI substituted the red cabbage for finely sliced celery and cu***ber for the crunch and omitted the last four ingredients. Used bbq chicken breasts. Used my own basil viniagrette and served alongside a potato salad with creamy potato salad dressing (1/2 heinz mayo, 1/4 sour cream, 1/4 greek yoghurt & 1tsp smoked paprika, squeeze of lemon juice). Nice summer meal.
