Deli sandwiches: The Monterey Manwich

Warren Elwin makes deli sandwiches for lunch on days when you need something meaty.
- Caramelise 1 sliced onion in a hot frying pan, stirring frequently and deglazing if necessary with a little lemon juice and beer.
- When the onion is soft, add 2 Tbsp HP brown sauce, 1 Tbsp of kasundi chutney and hot sauce if you’re inclined. Mix and season with fresh pepper.
- Meanwhile grill 2-3 pork sausages until just cooked. Rest for a couple minutes, slice and layer into a lightly toasted soft bap or ciabatta roll.
- Add the hot onions and eat up.
