Deli sandwiches: The Roxy

Warren Elwin makes deli sandwiches for lunch on days when you need something meaty.
- Cut a square portion from a ciabatta loaf and slice in half to open.
- Spread some soft goat’s cheese across the bottom, add plenty of fresh rocket, layer up with finely sliced smoked chicken, drizzle with vinaigrette (use your favourite store-bought variety or make your own from recipe below).
- Add a little salt and pepper, and cut in half to eat.
- To make a zingy vinaigrette, mix together a small handful of chopped dill and coriander, a finely chopped chipotle pepper or a few pickled jalapenos, a chopped roasted red pepper, a dozen black or green olives (pitted and chopped), the zest and juice of a lemon, 2 Tbsp balsamic vinegar, ¼ cup olive oil and a some black pepper.
