Yael Shochat: Thelma's chicken dish
- Cover the pieces of quartered chicken in salt and pepper and fry in olive oil until browned. Take out and fry the chopped vegetables on a low heat for 10 minutes.
- Put chicken back in the pot, add wine, then cook for 5 minutes.
- Add tomatoes and the bundle of combined basil, Italian parsley, thyme, oregano and a little rosemary that has been tied together. Bring to the boil, then cover and simmer for 30 minutes.
- Uncover and cook for another 15-20 minutes. Sprinkle with chopped parsley. It's lovely served with fresh pasta or mashed potatoes.
