This is what the Japanese sprinkle on dishes for a burst of flavour; it can be made in many ways. Use it like a flavoured salt to sprinkle over rice, grilled fish, veges, fried eggs...
Makes 3⁄4 cup.
Bake nori in a hot oven for 5-10 minutes until they’re really crispy, then crumble them into small pieces.
Place the crumbled nori in a spice grinder or food processor, add 2 Tbsp sesame seeds, sea salt and sugar. Blend until finely ground. Mix through another 3 Tbsp sesame seeds. Store in an airtight container for up to 2 months.
