.A vegetarian delight

Ingredients

1 Tbsp Canola oil
2 Onions, finely diced
2 Carrots, finely diced
1 Tbsp Curry powder
1½ cups Red lentils
1½ cups Kumara, peeled and diced
3 cloves Crushed garlic
1 Capsicum, diced
400 g Diced tomatoes, can in juice
¼ cup Fresh parsley, or coriander, chopped

Directions

  1. Heat the oil in a large, non-stick frying pan. 
  2. Add the onions and carrots and cook - stirring - until the onions are soft.
  3. Stir in the curry powder then place in a slow cooker.
  4. Wash the lentils well. Place in the slow cooker.
  5. Add all the remaining ingredients - except the coriander - to the lentils. 
  6. Cover and cook on low for five to six hours.
  7. Serve garnished with the parsley or coriander and serve with a crisp salad.

A vegetarian delight using low-cost, protein-packed lentils. No crockpot/slowcooker? Then place in a casserole, cover and cook for 1 & 1/2 hours at 170 degC. Or cook on very low heat in a heavy-based saucepan for 1 to 1 & 1/2 hours.
