This recipe uses oven-roasted buttercup as a starting point. Click here for instructions on how to roast a buttercup.
- Peel the skin from half a hot roasted buttercup.
- Add buttercup to a bowl with garlic and butter. Mash together well, then add nutmeg, salt and pepper, cream and chives.
- Serve as a mash or press into a baking dish and top with panko crumbs, pumpkin seeds and grated parmesan. Bake until golden.
