Mini date scones
Based on Warren's fantastic soda pop scone recipe, add a few extras to make these delightful mini scones.
- To the soda pop scone dough recipe (ingredients included above), gently fold through 200g chopped, pitted dates, the juice of 1 orange, a capful or two of rum and a few Tbsp of your favourite jam or preserve.
- Spoon into a greased 24-hole mini muffin pan and bake in a hot (220C) oven for 20 minutes, until golden. This will make 48 mini scones.
