Seeni sambal is a Sri Lankan sweet onion relish, a great condiment to serve with a curry.
|2 Tbsp||Canola oil|
|3||Red onions, large sized, peeled and sliced|
|1 Tbsp||Fish, (Maldive)|
|1 Tbsp||Crushed ginger|
|2||Garlic cloves, crushed|
|1 tsp||Chilli flakes, red|
|1 sprig||Curry leaves, small|
|2||Pandan leaves, (optional)|
|1 to taste||Salt|
|1 piece||Lemongrass, (optional) smashed|
|1 tsp||Tamarind paste|
|1 Tbsp||Brown sugar|
- Heat the oil in a frypan over medium heat.
- Mix together the onions, fish, ginger, garlic, spices, lemongrass and salt and stir fry until onions change colour.
- Lower heat, continue to stir and when the onions start to caramelise, add the tamarind paste and brown sugar and cook for two minutes.
