
Chilli Garlic Prawns

Ingredients
50 g | Butter |
2 Tbsp | Olive oil |
4 | Garlic cloves, thinly sliced |
2 | Long red chillies, seeded and diced |
1 kg | Prawns, peeled, green |
1 to taste | Salt & freshly ground pepper |
1 | Lemon, grated rind |
2 Tbsp | Lemon juice |
2 Tbsp | Fresh coriander, finely chopped |
Directions
- Heat the oil and butter in a large frying pan on medium.
- Add the garlic and chilli and cook, stirring, for 30 seconds.
- Add the prawns and season. Cook, stirring, until the prawns are pink and just cooked through.
- Add the lemon rind, juice and coriander. Toss to combine.
- Serve with a rocket salad and sliced French bread.
