Chilli Garlic Prawns

- Heat the oil and butter in a large frying pan on medium.
- Add the garlic and chilli and cook, stirring, for 30 seconds.
- Add the prawns and season. Cook, stirring, until the prawns are pink and just cooked through.
- Add the lemon rind, juice and coriander. Toss to combine.
- Serve with a rocket salad and sliced French bread.
