Pancakes and poached fruit

- Make some pancakes about the circumference of a teacup.
- Poach some stone fruit. I poached apricots in a honey water syrup with a little pure vanilla essence, orange zest and the juice of an orange.
- Remove the poached fruit and reduce the syrup down to a coating consistency.
- Sandwich the poached fruit between the pancakes. Be generous with the reduced syrup (warm or cold) and blob with a decent amount of whipped cream or mascarpone.
