Makes 20

Ingredients

125 g Butter
½ cup White sugar
2 cups Cornflour
2 Eggs
1 cup Self raising flour

Icing

1 cup Icing sugar
1 Tbsp Lemon juice
½ tsp Butter, (softened)
1 Water, (hot)
1 Raspberry jam

Directions

  1. Preheat oven to 200C and grease a baking tray. Cream butter and sugar until pale. Add eggs one at a time, beating after each.
  2. Sift cornflour with flour then gently mix into creamed mixture.
  3. Drop small spoonfuls onto the tray, allowing for spreading. Bake for about 10 minutes until cooked but not brown. Transfer to rack to cool.
  4. Make icing by mixing icing sugar, lemon juice and butter together, carefully adding water until a smooth spreadable consistency is achieved.
  5. Spread half of the kisses with icing and top with a teaspoon of raspberry jam. Sandwich together and dust with extra sieved icing sugar.
