Wild rice, watermelon and walnuts

Wild rice has a delicious nuttiness and a slightly crunchy texture - it’s perfect with walnuts. I have added the watermelon and mint to provide a hint of sweetness and a fresh summer zing.
|¼ cup||Walnuts, chopped|
|1 cup||Wild rice, cooked|
|1 tsp||Flaky sea salt|
|1 to taste||White pepper, freshly ground|
|1 cup||Watermelon, diced|
|1 cup||Tomato, ripe, diced|
|½ cup||Red capsicum|
|½ cup||Red onion, diced|
|2 tsp||Red chillies, finely chopped|
|1 Tbsp||Sherry vinegar|
|1 Tbsp||Vegetable oil|
|1 Tbsp||Walnut oil|
|2 Tbsp||Parsley, sliced|
|2 Tbsp||Coriander, sliced|
- In a bowl mix together cooked rice, walnuts, salt and pepper and spoon on to a platter.
- Gently mix together watermelon, tomatoes, capsicum, onion, chilli, vinegar and oils — arrange alongside rice mix and sprinkle with parsley and coriander.
- Combine all ingredients together when serving to guests.
