Yoghurt with cucumber, walnuts and sultanas
In this Iranian recipe from author Ghillie Basan, the yoghurt salad includes not only cucumber, but also walnuts and sultanas. It is traditionally garnished with dried pink rose petals.
- Put the cucumber into a bowl and sprinkle lightly with salt. Put the yoghurt into a bowl and stir in the walnuts, sultanas and herbs. Drain the cucumber and add to the yoghurt. Season to taste. Leave for an hour before serving.
