Lightly spiced fresh fish
When you're lucky enough to have fillets of freshly caught fish, they'll be delicious if you dust them with spices before tossing them into a pan or onto the barbecue. If there's only enough fish for a taste, serve it resting on a bunch of baby salad greens as a first course. If there's plenty, make it the main course.
- Trim the fish. Combine the spices and sprinkle on both sides of the fish. This may be done an hour ahead of time.
- Just before cooking, sprinkle with salt. Heat a little oil in a frying pan or oil a barbecue plate.
- Fry the fish on one side, then turn and cook the other side just until the fish is cooked through. Serve hot or warm.
