Gluten-Free Hazelnut Macaroons

Makes 15.

Ingredients

6 Tbsp Caster sugar
¾ cup Hazelnut, finely chopped, or hazelnut meal
2 Eggs, whites only

Directions

  1. Preheat the oven to 150degC. Line a baking tray with baking paper. 
  2. Reserve 2 tbsp of the hazelnut meal for garnishing.
  3. Whisk the egg whites in a bowl until very stiff. Beat in half the sugar and beat again until the mixture becomes shiny.
  4. Fold in the hazelnut meal and the remainder of the sugar.
  5. Place heaped dessertspoons of the mixture on the baking paper.
  6. Sprinkle with the reserved hazelnut meal.
  7. Bake for 50-60 minutes until set and slightly browned. Cool on a wire rack.
