Nut-Crusted Chicken

Chopped macadamia nuts or hazelnuts could replace the almonds.

Ingredients

2 Chicken breasts, large, skinned and boned
2 tsp Balsamic vinegar
1 clove Garlic, crushed
1 to taste Salt & freshly ground pepper
4 tsp Cornflour
3 Tbsp Walnut oil, or hazelnut oil
2 Tbsp Orange juice, or water
70 g Almonds, sliced
1 Egg

Directions

  1. Halve each chicken breast lengthwise.
  2. Combine the balsamic vinegar, salt, pepper, garlic, 2 tbsp of cornflour and the orange juice or water. Mix well. Marinate the chicken in this mixture for at least 30 minutes.
  3. Preheat the oven to 190degC. Place 2-3 tbsp of oil in an oven pan and heat for five minutes. Lightly beat the egg together with the remaining 2 tbsp of cornflour.
  4. Place the almonds on a board. Dip the chicken portions into the egg mixture, then coat with the almonds.
  5. Place in the preheated oven pan. Bake for 10-15 minutes, or until cooked and golden.
  6. Great served with a fresh fruit salsa or plum sauce.
