Pineapple Rice Salad

|1 Tbsp||Oil, (salad style)|
|3 cups||Brown rice, cold or basmati rice|
|1 cup||Pineapple, fresh or canned cubes|
|3 Tbsp||Hoisin sauce|
|1 cup||Cucumber, sliced|
|¾ cup||Cherry tomatoes, halved|
|1 cup||Toasted cashew nuts|
- Saute onion in oil over low heat, until softened.
- Add rice and hoisin and mix well.
- Place in a salad bowl with remaining ingredients.
- Dressing: 3/4 cup plain yoghurt, 1/2 tsp curry powder and 3 tbsp mayonnaise.
