Brioche queen pudding with berries
- Preheat oven 160C. Grease ovenproof baking dish. Beat egg yolks with cream, milk and the first measure of sugar.
- Place crumbs in bottom of dish and pour over egg mixture. Bake for 20 minutes or until set. Remove from oven and increase temperature to 200C. Cover base with berries.
- Beat egg whites until stiff, then gradually beat in sugar, 1 Tbsp at a time until sugar has dissolved. Spoon meringue on to berries and return dish to oven. Bake for 10 minutes.
