Oven baked snapper with garlic, tomatoes and broccoli
- Preheat the oven to 200C. Heat the oil in an ovenproof pan. Put the snapper skin-side down in the hot pan with the garlic and tomatoes. Sear everything for a minute or two. Flip the fish carefully, then put the pan into the oven. Leave until the fish is opaque and cooked through - about 2-3 minutes.
- Meanwhile, bring water to the boil in the lower section of a steamer. Place the broccoli in the top section to steam for 2 minutes. Remove from the heat while still crunchy. When the fish is cooked, the dish is ready. Season and serve with the broccoli. Squeeze lemon juice over the top and season.
