Roasted yams with thyme and orange
When yams are properly cooked they puff up, so when you bite into them the skin tantalisingly gives way to a soft, creamy interior, with a faint lemony taste. They are perfect with any roast meat.
- Preheat the oven to 180C.
- Wash the yams to remove any dirt and put them in a roasting dish with the garlic, thyme and olive oil. Season well and toss them gently together with the orange zest and juice. Roast for 45 minutes until the yams have changed colour and feel soft to the touch.
- Remove from the oven and serve as a side dish, with the garlic cloves. I like to sprinkle them with fresh thyme leaves just as they are served.
