Spaghetti with Sausage, Lemon, Chilli and Tomato
( SERVES 4 )
|1 Tbsp||Olive oil|
|1 can||Chopped tomatoes, (400g)|
|1 Tbsp||Tomato paste|
|1||Lemon, (zest of, and roughly chopped)|
|¾ clove||Garlic, (finely diced)|
|1||Onion, (finely diced)|
|½ cup||Red wine|
|1||Chilli, (finely diced)|
|1 tsp||Caster sugar|
|1||Salt & freshly ground pepper|
|1 handful||Parsley, (finely chopped)|
- Heat oil in a pan, add sliced sausage, brown for a few minutes then remove from pan.
- Add garlic, onion, zest and capers. Stir gently for 5 minutes then add remaining ingredients (except spaghetti) and simmer gently for half an hour.
- Cook spaghetti according to packet instructions, combine with sauce and add parsley.
