Buttery potatoes with mint
|1 to taste||Salt & freshly ground pepper|
|½ cup||Fresh mint, finely chopped|
|1½ kgs||Gourmet potatoes, Use jersey bennes or red rascal potatoes|
- Scrub the potatoes well and cut any large ones in halves or quarters. Bring a large pan of salted water to the boil. Add the potatoes and cook for 15-20 minutes until tender.
- Drain well and while hot toss with the butter, mint, salt and pepper.
- Serve hot or at room temperature.
