Cajun vegetable stew
( SERVES 8 )
This appears difficult, but only because of the number of ingredients – it’s deliciously easy!
|2 cups||Onions, chopped into 2.5 cm cubes|
|2 Tbsp||Garlic, chopped|
|2 Tbsp||Coriander, ground|
|2 cups||Pumpkin, peeled and chopped into 1.5 cm dice|
|1 cup||Kumara, peeled and chopped into 1.5 cm dice|
|1||Red capsicum, seeded and chopped|
|4||Bird's eye chillies, chopped and seeds removed|
|1||Green banana, sliced|
|400 g||Tomatoes, peeled and chopped|
|400 ml||Coconut cream|
|425 g||Whole kernel corn, drained|
|1 tsp||Fresh thyme|
|½ cup||Orange juice|
|2 Tbsp||Fresh coriander, finely chopped|
- Heat the oil and cook the onions gently until soft, but not coloured. Add the next five ingredients. Cook for 30 seconds. Add next four ingredients.
- When the vegetables have a coating of the spices, add the next 7 ingredients and season with salt and pepper.
- Cover and simmer on a very low heat for 60 minutes. The vegetables should still be whole, not mushy. Add the coriander and serve.
