Fennel, bean and snowpea salad
- Trim and slice the fennel bulbs thinly. Bring the stock to a simmer and add the fennel. Simmer for 5 minutes. Add the beans and snowpeas and continue to simmer for 2 minutes, ensuring they remain a little crisp. Drain well.
- Whisk the dressing ingredients together(spring onions (finely sliced), garlic (crushed), ginger (finely chopped), soy sauce, orange (grated rind and juice), sesame oil and olive oil. To serve, pile the vegetables onto a serving plate, and sprinkle over half the dressing.
