Fennel, Bean and Snowpea Salad
( SERVES 8 )
- Trim and slice the fennel bulbs thinly. Bring the stock to a simmer and add the fennel. Simmer for 5 minutes. Add the beans and snowpeas and continue to simmer for 2 minutes, ensuring they remain a little crisp. Drain well.
- Whisk the dressing ingredients together(spring onions(finely sliced), garlic(crushed), ginger (finely chopped), soy sauce, orange(grated rind and juice), sesame oil and olive oil). To serve, pile the vegetables onto a serving plate, and sprinkle over half the dressing.
