Oysters and snapper patties
- Place the fish in a food processor and purée until fine.
- Add the flour, oyster sauce, fish sauce and egg and combine well. Turn out into a bowl and fold in the spring onion(chopped), oysters(roughly chopped), chervil(finely chopped), lime zest and juice(of 1 lime). Season to taste with salt and pepper.
- Form the mixture into about 16 6-7cm patties, wetting your hands so the mixture doesn’t stick to them. Dust the patties with extra flour, heat the oil in a frying pan and cook in batches of about 5 at a time.
- Serve warm, accompanied by lime wedges.
