Wheat free carrot cake
- Preheat the oven to 175C. Lightly grease two 18-20cm round sandwich tins and line with baking paper.
- Combine the sugar, essence, eggs and oil in a bowl.
- Add the sifted flours, baking soda and spice.
- Stir in the grated carrot and chopped walnuts.
- Pour into the prepared tins. Bake for 30-35 minutes.
