Bacon and tomato side dressing for fish
Often garnishes that are put on top of the fish can overpower some of the flavours so it is a good idea to prepare a garnish that is placed around the fish.
- Finely dice the bacon and tomatoes.
- Cook bacon until crispy brown.
- Add onion and cook till soft.
- Add tomatoes and garlic then cover for 5 minutes.
- Stir in basil adding salt and pepper.
- Leave the lid off the pot and remove from the heat once excess moisture has been reduced.
