This delicious jam is probably the simplest to make. I never wash the raspberries, but if they need to be washed, drain them thoroughly before using. Alternatively, use blackberries, if you can still find them, or strawberries.
- Place the fruit and water in a deep saucepan and gently bring to the boil. Turn up the heat and boil rapidly for 5 minutes. '
- Lower the heat and add the sugar and juice of 1 lemon, stirring until dissolved. Increase the heat, bring back to the boil and boil rapidly for 1 minute.
- If necessary, skim off any scum, then pour the jam into warm, dry jars. Cover with lid.
